Sabudana Kheer is a sweet pudding made with sago (sabudana), milk and sugar, flavoured with cardamom and saffron, and garnished with dry fruits. Sabudana Kheer is creamy and rich in texture. Sabudana Kheer is a popular pick and is prepared during fasting festivals such as Navratri. It is easy to prepare and tastes absolutely delicious.
Ingredients
1/2 cup sabudana
2 cups whole milk
2 cups water
1/2 teaspoon green cardamom powder
4 to 5 tablespoons sugar
3 to 4 strands of saffron
2 tablespoon cashews
1/2 tablespoon raisins
Instructions
- Rinse 1/2 cup sabudana for 2-3 times in water or until the water runs clear of starch. Soak sabudana in 2 cups clean water for 15 to 20 minutes in a pan.
- Place the pan on stovetop and cook sabudana until sabudana pearls started to float on top. This takes 5 to 6 minutes on low to medium heat.
- Next, add 2 cup milk and 1/2 teaspoon green cardamom powder. Stir well.
- Add 4 to 5 tablespoons sugar or as per your taste preferences.
- Continue to simmer till sabudana pearls have softened and the kheer has thickened. This takes 15 to 20 minutes on low to medium heat.
- Stir often so that sabudana does not stick to the bottom of the pan.
- Turn off the heat and add dry fruits of your choice- cashews, raisins or almonds.
- Serve the creamy sabudana kheer and garnish with saffron strand and some chopped cashews.
