Ingredients
- Tomatoes – 4 medium-sized, finely chopped

- Turmeric Powder – 1/2 teaspoon
- Red Chilli Powder – 1 teaspoon
- Coriander Powder – 1 teaspoon
- Cumin Seeds – 1/2 teaspoon
- Asafoetida (Hing) – A pinch
- Oil – 2 tablespoons
- Salt – to taste
- Water – 1 cup
- Sev – 1 cup (thick or medium variety)
- Fresh Coriander Leaves – A handful, finely chopped for garnish
Instructions
1.Prepare the Base:
- Heat the oil in over medium heat. Once hot, add the cumin seeds let them sizzle until then turn golden brown.
- Add a pinch of asafoetida, followed by the chopped onions. Sauté the onions until they become translucent and soft.
2. Add Aromatics:
- Stir in the ginger-garlic paste and slit green chillies. Sauté them for another 2-3 minutes until the raw smell of ginger-garlic paste disappears.
3. Cook the Tomatoes:
- Add the finely chopped tomatoes to the pan. Cook until they become soft and mushy, stirring occasionally. This should take about 5-7 minutes.
- Sprinkle turmeric powder, red chilli powder, and coriander powder over the tomatoes.
- Mix well and cook for another 2 minutes to allow the spices to blend.
4. Create the Gravy:
- Pour in a cup of water and add salt to taste. Stir well to combine. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 5 minutes. This will help the flavours to meld together and the gravy to thicken slightly.
5. Finish with Sev:
- Just before serving, add the sev to the tomato gravy. Mix gently, ensuring that the sev is well coated with the gravy but still remains its crunch.
