Hakka Noodles is a popular Indo-Chinese dish made with stir-fried noodles. It is a quick and flavourful recipe that combines bold flavours of soy sauce, chilli and vinegar, making it both spicy and tangy.
Ingredients
200 grams Hakka Noodles
2 tablespoons Oil
1 teaspoons finely chopped garlic
2 to 3 green chilies
3 to 4 spring onions
1 finely chopped carrot
8 to 10 French beans
1 finely chopped capsicum
1/2 cup finely chopped cabbage
1/4 teaspoon vinegar
1.5 teaspoons soy sauce
Salt as required
Crushed black pepper
Instructions
- Finely chop all the veggies and keep aside.
- In a pan, boil around 4.5 cups water. Add teaspoon salt and few drops of oil.
- Add the Hakka Noodles and cook it as per the instruction given on the packet.
- Once the noodles are cooked, drain all the excess water. Rinse noodles with fresh water very well.
- Add 1.5 teaspoons of oil. Toss noodles well so that the oil gets coated evenly on them.
- In a wok, heat 2 tablespoons of oil. Add 2 to 3 green chilies and sauté them on a medium-low to medium heat. Add 1.5 teaspoon finely chopped garlic and sauté for about a minute.
- Add 3 to 4 small spring onions and 8 to 10 finely chopped French beans. Stir fry for about 3 minutes on medium heat.
- Add 1/2 cup finely chopped cabbage and 1 finely chopped carrot and continue stir-frying.
- Stir fry for about 5 to 6 minutes. You can stir fry them for less time if you want more crunchy veggies. Cook them till the edges of the vegetables turns golden in color.
- Add 1.5 teaspoon soy sauce and mix well.
- Add the boiled noodles. Toss the noodles and stir-fry them for 1 to 2 minutes.
- Add salt and crushed black pepper as per taste. Add 1/4 teaspoon vinegar.
- Toss everything well and stir fry for a minute. Switch off the flame and garnish with spring onions and mix well.
- Serve Hakka Noodles.
