Festival Special Kheer Recipe | Rice Kheer

Kheer is a Indian version of a sweet pudding made with milk, rice, and sugar, often flavored with cardamom, saffron and garnished with nuts. Kheer has rich, creamy texture and is commonly served during festivals and special occasions.

Ingredients

1/4 cup basmati rice

1 litre whole milk

Sugar as required

14 to 16 saffron strands

1/2 teaspoon green cardamom powder

Sliced Nuts- almonds, cashews, pistachios, golden raisins

Instructions

  1. Rinse 1/4 cup basmati rice for 2-3 times in water and soak rice for 15 to 20 minutes in water.
  2. Meanwhile, take 1 litre full-fat milk in a kadai or saucepan. Keep the pan on low to medium-low heat.
  3. Stir at intervals so that milk does not burn from the bottom.
  4. Let the milk come to a boil.
  5. Take 1 tablespoon milk from the pan in a small bowl and let it become warm. Then, add few strands in it. Keep aside.
  6. Once the milk begins to boil, add rice to the boiling milk. Mix well.
  7. Cook the rice on low heat. Cook the rice till they are 50% done.
  8. Now add 6 tablespoons sugar or as required. Mix it well with other ingredients.
  9. Continue to cook rice on low to medium-low heat. Stir at intervals.
  10. Cook the rice until rice grains are almost cooked. Then add 1/2 teaspoon green cardamom powder.
  11. Add sliced dry fruits- 1 tablespoon each of almond, pistachios and cashews.
  12. Mix well.
  13. Now, add the prepared saffron milk.
  14. Mix everything well and continue to cook on low heat till kheer thickens and rice have completely cooked.
  15. Once the rice soften completely, then switch off the heat. Add 1 tablespoon of golden raisins.
  16. Kheer is ready. Serve the kheer hot, warm or chilled.
