Tomato rice is a aromatic and flavorful South Indian dish made with rice, tomatoes and a blend of spices. Tomato rice is tangy and slightly sweet in taste from the tomatoes, combined with the warmth of spices. This recipe is popular comfort food because of its simplicity and delicious taste.
Ingredients
1 cup boiled basmati rice
1/3 cup finely chopped onions
1 cup finely chopped tomatoes
1/2 teaspoon chopped green chili
1 teaspoon Ginger Garlic Paste
1/2 teaspoon mustard seeds
1/2 inch cinnamon stick
2 green cardamoms
2-3 cloves
4 to 5 fenugreek seeds
6 to 7 curry leaves
1/4 teaspoon turmeric powder
1/2 teaspoon black pepper powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
1 teaspoon cumin powder
Salt as required
1/2 tablespoon chopped mint leaves
1/4 cup chopped coriander leaves
2 tablespoon oil
Instructions
- Heat oil in a kadai and add 1/2 teaspoon mustard seeds. Let the mustard seed crackle.
- Add 4 to 5 fenugreek seeds and fry them for a few seconds. Make sure to not burn them.
- Add 1/3 cup chopped onions, 2 cardamom, 2-3 cloves and 1/2 inch cinnamon stick.
- Stir and sauté until the onions are translucent.
- Now, add 1 teaspoon ginger garlic paste, 1 chopped green chili and 6 to 7 curry leaves. Stir and sauté for few seconds until the raw aroma of ginger-garlic goes away.
- Add 1/4 cup chopped fresh coriander leaves and 1/2 tablespoon chopped mint leaves. Stir and sauté for a minute.
- Add 1 cup finely chopped tomatoes. Then, add the following listed spices:
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1 teaspoon cumin powder
- Stir well so that tomatoes are well coated in the spices. Sauté tomatoes until they become mushy and pulpy. Stir often.
- Now, add the soaked rice and mix well with all the other ingredients.
- Sauté rice for a minute and season it with salt.
- Garnish with coriander leaves and serve tomato rice with curd, raita and papad.
